Sparkling Traditional Method Dry Fine Cider
A blend of hand picked apples grown in southern England orchards near the coast in East Sussex. A place where apples have been grown for generations but are now appealing to the growers of grapes for wine production in the UK. The apples in the blend grown by Steve Reeve are Braeburn, Jonagold, Bramley and Golden Delicious are well suited to a famous production method in wine and also cider, the Traditional Method. Ben Walgate has enjoyed much success in his wine career with English sparkling wines as well his developing cider company.
They are pressed in to stainless steel vats and old oak casks, spontaneously fermented and then a long ageing time, leads to natural settling of the fine lees meaning no filtration needed. The cider is bottled for a second fermentation before being disgorged after a year of laying on its side developing more complex aromas, flavours and texture.
A delicate nose, crisp apple and lemon notes. Palate is dry and fresh with bright acidity and fine strings of bubbles rise up out of the flute. Alc. 6.7% vol
