Sparkling Dry Traditional Method Fine Cider
Brand new small batch special cuvée from Ted & Fred at Two Orchards. This Traditional Method cider is made up from an assortment of old Sussex culinary apples from Broomer's Hill orchard which is a stone's throw from the cidery. The fruit was pressed on a traditional rack & cloth press and then transferred straight to the barrel, where it quickly developed a protective flor yeast and remained undisturbed for ten months.
It was then bottled with a low sugar tirage for a soft sparkle and left to age sur-pointe to avoid excessive lees contact, keeping its acidity and youthfulness.
A wonderful round nose of toasted oak and baked apple with fascinating savoury note on the palette and elegant sophisticated texture. Abv 8.1% vol.
