Sparkling Dry Traditional Method Fine Cider
The annual Traditional Method (same as Champagne) cuvee release from Polly & Mat Hilton; hailing from the 2020 growing season. The bottle reflects the terroir of the Exe valley in south Devon, where the fostered orchards that makers look after are, along with their flock of Shropshire sheep.
The fruit grown in these almost forgotten orchards comes from old trees, some of the varieties totally unknown, the apples have to be picked by hand, carefully selected and chosen for the qualities they can bring to the cuvee. In this vintage the makers were after a blend of dessert and culinary apples, chosen for their bright, fresh acidity, alongside a handful of sweet Devon cider apples, to smooth & round out the blend.
Pale straw gold with exceptionally fine champagne-like bubbles. The unique Sandstone geology of the Exe valley is at the forefront of this bright, vibrant cider, where prominent minerality and salinity combine with red apple skin, honey and beeswax. Would go extremely well with all manner of seafoods like crab, oysters or paired with moules marinière. Abv 8% alc.
