Naturally Sparkling Medium Sweet Fine Perry
Perry Pear trees are uncommon in Devon; this spontaneously fermented naturally sweet perry was made from just five trees; two Blakeney red, two Norton Butt, that makers Polly & Mat fostered them in Brampford Speke in the Exe Valley, and one unknown variety from further up the Exe on the edge of Exmoor.
This perry is a combination of 2021 and 2022 vintages, the perry pressed in 2021 was left to mature and mellow for a year in stainless steel before being blended with the perry pressed in 2022, which keeved spontaneously, preserving a zingy, fruity, natural sweetness. Then like with all their Pet Nats, the makers bottled the juice before the fermentation had finished capturing a natural sparkle. All bottles were riddled & disgorged by hand for perfect clarity. The resulting perry has notes of the ripe Blakeney Red fruit – cantaloupe, kiwi, cucumber, passion fruit, plus the mineral complexities of Norton Butt - pear skin, wet stone, and a coastal salinity.
