Still Dry Fine Cider
Wading In is a barrel aged, wild fermented, still Egremont Russet cider. This vintage spent 14 months in oak and then allowed to evolve under cork for two years prior to release. Hand-picked, hand-selected, perfectly ripe fruit were pressed into stainless steel and left to ferment spontaneously. Towards the end of fermentation, the cider was racked into a selection of 2nd and 3rd use ex white burgundy barrels to undergo a malolactic fermentation and age on the fine lees without battonage.
It pours a pale straw colour and smells initially of warm, ripe yellow apples picked straight from the tree, soon joined by peach, sweet wood, honey and blossom flowers. It's a juicy mouthful too, all charred pineapple, succulent acid, fennel, lemon oil, citrus and that classic nutty Egremont finish. Alc. 7.7% vol.
