Sparkling Medium Dry Fine Cider
A wild-fermented pet-nat cider, with a prominent tannic structure derived from Dabinett apples grown in Mr. Plūme orchards. Three additional local varieties, also from our orchard, balance the acidity and enhance the aromatics. Multiple rackings control the fermentation speed to preserve its natural sweetness. Alc. 6.5%.
Dace & Māris of Mr.Plūme in Latvia, have been experimenting with Latvian apples and pears, using various fermentation methods. Their orchard features about 50 apple varieties from heritage eating varieties, red fleshed crab apples,to tannic apples to English and French cider apple varieties plus some Austrian and English perry pears. Employing both wild & cultured yeast fermentations, they strive for maximum quality and have received international recognition. Their philosophy centres on the belief that the apples and pears from their orchard hold even greater potential for expressing their unique character.
