Beccy and Sam of Wilding's cider are, without a doubt, among the most exciting makers in Somerset. Their approach to cidermaking is rooted in a deep respect for the land; they hand-pick fruit from traditional orchards where standard trees are spaced to allow for livestock grazing. These historic spaces are true biodiversity hotspots, managed without sprays or fertilisers. By working with traditional apple and perry pear varieties in small, clever batches, they create bottles that are a unique expression of the season, poised, clean, and full of complex character. Wilding's cider is crafted with a minimal-intervention philosophy: fermenting with wild yeasts and eschewing sulphites, filtration, or pasteurisation. We're thrilled to unveil seven new delights:
