A selection of 3 wild fermented, bottle conditioned ciders from Wales fermented with locally harvested honey. Sam, the maker called this; Dull y Filltir Sgwâr/ Square Mile Method, the term 'milltir sgwâr' in Welsh evokes an experiential sense of place more than a quantifiable measurement of space. He wanted to create a terroir driven clean sparkling cider using only elements derived from the locale.
They source their apples from within Tydecho's parishes in the upper Dyfi valley, the fruit is largely younger plantings of relatively widespread sweet and sharp varieties. There are also a number of ancient trees, potentially rare or even undocumented varieties & a few interesting wild crab apple trees which they used in one blend last year, albeit in judicious quantities. In the coming years they will be looking to graft and plant heritage Welsh cider apples.
