Saycell’s Unknown is a genetically unique perry pear whose original name has been lost to time. Today, just seven prized trees thrive at the historic Saycell’s Farm. A genuinely rare variety, Saycell’s Unknown offers a rich, complex profile with well-structured tannins. To enhance its depth, they partially fermented it in oak casks, softening the bitterness to highlight its delightful honeyed pear flavour. Alc. 7% vol.
