Sparkling Dry Fine Perry
The Red Pear, or Aylton Red, featured in John Evelyn’s famous Pomona (a book cataloguing celebrated apple varieties, with beautiful artwork) of 1662. Aylton, the home of this pear, being a village in Herefordshire. Ross on Wye’s Red Pear trees were planted in 1987, so are now coming up on 40 years old.
The archetypal characteristics this pear gives are on the softly sumptuous side of perry, with a creamy mouthfeel, and florality on the nose. The 2023 vintage holds a higher acidity, and recently won 1st Prize in the dry perry category at the 3 Counties Cider & Perry Championships. Pair with creamy, dairy based desserts, or mellow hard cheese. Alc. 5.2% vol.
