Sparkling Medium Fine Cider
A multi vintage blend of bittersweet cider apples, wild fermented in old American oak barrels. Ripe, fresh sweet apple character with a barrel influence to compliment the superb apple cider doughnuts created by the very talented Brett St Clair. The name is a nod to Bruce Springsteen and the hours a baker loses to Proving It.
Rich toffee, woody apple with tingles of acidity to deal with those wonderful sugar crystals and robust earthy oak and mature fruit to complement the dough. Alc. 7.7% vol.
