Fine Cider Apple Eau De Vie Aged in Barrel With Fresh Juice
Originating in France, Pommeau is made by combining young apple brandy with freshly pressed, unfermented apple juice, before aging it in a barrel for a period of time. The fortification of the juice in this way, not only brings the strength of the brandy down but crucially it prevents fermentation and retains all the flavours, aromas and characteristics of the apple itself. Time in the barrel adds further complexity and nuance to the drink.
The process for this bottle began with a wild fermented cider from Little Pomona, distilled twice to create a fine base spirit. In the autumn of 2024, when the cider apple harvest began to gain momentum and the juices from the press were flowing fast and free, the spirit and the fresh juice were put together to achieve the perfect balance of fruit and acidity. Sent to third fill ex-wine casks for 21 months, the Pommeau was finally ready to bottle.
The element of time here is so important, allowing the wood and luscious sweetness of the apple to temper the fiery young spirit. In the end, what emerges from cask is a super elegant, rounded and rich yet still vivid and fresh. Honey and butterscotch sweetness, a hint of burnt caramel, vanilla, star anise and the juicy freshness of the apple, all combined into something utterly delicious. Alc 20% vol.
