This bottle shows the beauty in these robust fruits, turning the amber liquid heavy in tannins and sugars in to a refined fully fermented, carefully bottled Herefordshire cider. 

Having been conditioned in the bottle Pet Nat style this opens with a pop, the name is a reference to quotes in ciders illustrious history with academics and scientists and early evidence of Herefordshire ciders having life and vigour through their sparkle. The cider leaves a steady 'mantle' of foam as they would have described a few centuries ago, the nose is the essence of the place it was made, and the palate reveals a strong character of leather, spice and tingling acids.
