Still Bone Dry Fine Cider
A complex multi-orchard blend, based around the Harry Masters Jersey apple, along with some bittersharp and other bittersweets cider apples, each from a different traditional orchard.
They were co-fermented in stainless steel tanks initially, before a portion was transferred to old oak barrels (ex red wine, on their second fill of cider) for further ageing. This way they get the additional complexity of cask maturation but keep a fresher profile overall.
The aromas are heady & complex, with notes of orange rind, baked apple, marmalade, clove, orchard floor, and beehive. The acid is bright and hits the tongue first and the tannins are soft and full with some grip on the finish, excellently cutting through fatty foods. Cider made to drink with food. Alc. 7%.
