This 2023 vintage expression is crafted from an orchard blend of classic Dabinett and Bisquet apples, honouring traditional cider-making at its finest. The juice undergoes a slow, natural winter fermentation driven entirely by wild yeasts. Unfiltered and unpasteurised to preserve its true character, this cider is gently conditioned. The result is a vibrant, medium-dry cider boasting a beautifully rich hue, an undeniably fruit-forward aroma, balanced structure, light tannins, and a wonderfully smooth, subtly sweet finish. Best served thoroughly chilled. Pair it with salt & pepper fries, pigs in blankets, or fluffy pancakes. 5.3% vol.
