Sparkling Medium Dry Fine Cider

This bottle is a combination of three blends of cider, Cox - Gala, Cox - Bramley, and Dabinett - Bisquet. Bottle conditioned and left to age for at least 12 months, the flavours come with depth and complexity, from the ageing on lees, done to round everything off. 
It has an amber colour with a fine petillant mousse, rich notes of baked/stewed apple, blossom and wild yeast followed by cider lees and browned butter as the light tannins from the bittersweet varietals leave you with a savoury/saline mineral finish. Wingfield suggests trying this with honey drizzled goats cheese and rocket salad, lamb bhuna curry or lemon sorbet. Alc 6.6% vol.
