Find & Foster - Appellation 2021, Devon
An exquisite Traditional Method
(same as Champagne) bottle: few in the public know that the very thing, the method, that makes Champagne sparkling actually dates back longer in cider than wine... to the early 1600's. Maker Polly Hilton restores old, abandoned orchards in Devon, and works in a world leading way when it comes to the environment and biodiversity. An elegant, layered bottle, that's good enough for restaurants like Sune and Kol (on the world's 50 best restaurants list). Very nice with cured fish.
Oliver's - Stoke Red 2024, Herefordshire
From the maestro Tom Oliver, using the beautifully sumptuous and perfumed variety the Stoke Red apple. The choice of St John restaurant, this is a juicy, young one. Hailing from one of the most classic cider regions, Herefordshire, and the skill of a true legend, with over two decades of making experience. It's brilliant on its own, or with cheese; rarebit for example.
Wilding - Malus Pommeau, Somerset
A combination of cider apple eau de vie (un-aged apple brandy) with freshly pressed apple juice, and 2 years in year old Stockinger casks. The result is about as complete a taste of orchard culture as you could ask for; earthy and succulent, rich and complex. One for after dinner, with rich puddings, or cheese, or after lunch on the weekends (being at 20% abv). Can be found among the spirits at The Fat Duck, among others.
