Medium Dry Naturally Sparkling Fine Cider
The Dabinett is an apple full of character in its own right, it is the most planted variety of bittersweet apple in the UK, it has a good tannic backbone that can be gentle and textured at the same time. It lends itself well in blends and as a single variety cider with all of its pleasant qualities of orange oils, deep red apple and prominent tannins. It's also a reliable cropper in the Big Meadow orchard at Townsend Farm.
Picked late in the season and allowed to gently wild ferment over the winter before bottling in early spring for in-bottle conditioning - Petillant Naturel. Expect a thick textured cider, a little remaining apple sweetness with a zingy, fizzy acidity. Great with a nice slice of Kirkham’s Lancashire cheese. Alc. 6.4% vol.
