Discover a rare vertical tasting of single-orchard ciders by Wilding, sourced from the historic Burlands Orchard in Compton Dando. This curated selection highlights the orchard’s transformation across consecutive vintages under Wilding Cider’s management since 2021.
Burlands is a traditional orchard featuring 30-year-old trees situated on undulating ground by a small brook. The site boasts a complex soil mosaic of heavy clay, clay loam, and stony loam enriched with limestone and coal. High solar exposure and stressed growing conditions in specific areas produce fruit with exceptional concentration and consistently high sugar levels.
A vertical tasting involves sampling the same product from different years. It offers a deep dive into a producer’s philosophy and serves as a lens to observe how seasonal variables—including heat, moisture, and drought—shape the final character and consistency of the cider over time.
2022 Vintage: An exceptional year characterized by elevated sugar, tannin, and aromatic complexity. The nose features travel sweets, lime marmalade, and orchard floor, while the palate offers a mouthwatering balance of zippy acid and firm structure with a light sparkle.
2023 Vintage: This expression is more integrated and mellow than the 2022. With softer tannins and a hint more residual sugar, it stands as a sophisticated and versatile option for food pairings.
2024 Vintage: The vintage characteristics of 2024 have generally given very soft, approachable, and enjoyable ciders, with this specific tank being particularly welcoming.
