Still Dry Bittersweet Fine Cider

A blend of classic bittersweet and bittersharp varieties. The bittersweets (85%) include Chisel Jersey, Ashton Brown Jersey, Yarlington Mill, Harry Masters Jersey and Dabinett, balanced by 15% bittersharp apples. Fermented in Speidel plastic egg that is a unique vessel for fermenting wines and ciders that enhances circulation currents in the cider leading to a more complex and unified finished cider. Time has softened the bold 2022 tannins to produce a smooth cider with notes of pine and brass, and a long, warming finish. 

Made from apples hand-picked from traditional, unsprayed Somerset orchards. Full juice and wild fermented. Alc. 7.3% vol.
