A co-fermentation of red-fleshed crab apples and pears, all grown on Mr. Plūme family estate. It's wild fermented with no added sulphites and no filtration, simply racked a few times to slow down fermentation before bottling. The refreshing acidity is beautifully balanced with natural sweetness and rich tannins. Alc. 5.5%
Dace & Māris of Mr.Plūme in Latvia, have been experimenting with Latvian apples and pears, using various fermentation methods. Their orchard features about 50 apple varieties from heritage eating varieties, red fleshed crab apples,to tannic apples to English and French cider apple varieties plus some Austrian and English perry pears. Employing both wild & cultured yeast fermentations, they strive for maximum quality and have received international recognition.
