Sparkling Medium Sweet Fine Perry
This blend of various Perry pear varieties was made up over three weeks at the end of October and start of November. The late season fruit tends to be rich and full bodied with good tannins. Claret, Oldfield and Blakeney Red makes up the main part of the blend, with Hellens Green for acidity, Pine contributes tannin and acid, New Meadow for pretty aromatics and a small quantity of very late Taynton Squash. This was racked once in the winter to retain natural sugar, bottled in the spring of 2024, and disgorged in spring 2025.
A lovely balance between acid, sugar and tannin, with pretty aromatics to complement. Poached pear, dates, raisins, gooseberry acid, nettles, bitter herbs. Alc. 5%
