Ancestral Method Dry Fine Cider

Perfect fruit from the perfect harvest, Egremont Russet apples were handpicked and further ripened off the tree for over two months, before being pressed and sent to stainless steel to ferment with native yeasts. Eventually the Little Pomona team decided to bottle this with a small amount of residual sugar still remaining in the cider although for over a year nothing happened in bottle, in time those sleeping yeasts got to work giving the perfect little prickle of sparkle and freshness.

Extraordinarily textured and layered, with flavours of grilled pineapple, tingly fresh ginger, yellow melon, white peach. Ripe kiwi and a hint of star anise. Alc 8.4% vol.
