Medium Dry Still Fine Perry
Made from a cocktail of perry pear varietals: Gin, Brandy, Hellens Early, Red Longdon, Blakeney Red and Winnalls Longdon from orchards in Ocle Pychard and Preston Wynne in Herefordshire. The soils are fertile over red sandstone. Almost too good for perry pears and derived from the underlying Old Red Sandstone of the Bromyard Series.
The juice is spontaneously fermented and keeved, some unfermented sugars will be retained by the keeve to enhance the fruitiness in the finished perry and high alcohols are less important than good fruit character and fullness of flavour. The perry was then matured and finished in French oak white wine barrels from France and American oak rum barrels from Barbados and Jamaica.
