Sparkling Dry Traditional Method Fine Cider
A super-vibrant, wonderfully dry cider with a hint of quince on the nose, a mineral, sea spray and oyster shell-like freshness, and a gooseberry tart finish.
Originally destined to be blended as part of the 2021 Appellation vintage, that hint of quince appeared as we were taking a tank sample and meant we kept this to one side to allow the flavours to fully develop. As with each of our Champagne Method Fine Ciders, this is made made from a field blend of apples from unsprayed traditional Devon orchards. Varieties are chosen for their bright, fresh acidity, alongside a handful of sweet Devon cider apples to smooth & round. These undergo a spontaneous primary fermentation before secondary fermentation with champagne yeast and a further two plus years maturation on the lees in the bottle before being hand riddled and disgorged. The perfect seafood accompaniment. Abv 8% alc.
