Aaron Burr Cidery, situated in Wurtsboro, New York, operates on a 200-year-old homestead farm in the Catskill Mountains. Driven by a husband-and-wife team, their mission is to revive the traditions and aesthetics of early American homesteaders.  They produce what they call the "nightly table wine" of the early United States, drawing on the distinct characteristics of the Northeast's rich supply of wild apple trees. Guided by the belief that cider can be a remarkably refined beverage when nature is trusted, they honour historic methods through careful apple selection, orchard practices, and thoughtful fermentation techniques. Founder Andy Brennan is also the author of Uncultivated (2019), which explores wild apples and the art of making a living through real cider.
