Naturally Sparkling Medium Sweet Fine Perry

Perry Pear trees are uncommon in Devon; this spontaneously fermented naturally sweet perry was made from just five trees; two Norton Butt & three Blakeney Red, tucked away in one of the Bramford Speke orchards Polly & Mat foster, this Fine Perry combines two years of harvest. We blend a mellow, smooth & complex two year old ferment from 2023, with a zingy, fruity and naturally sweet ferment from 2024, bottling before fermentation is finished in the latter to ensure a light sparkle.  All bottles were riddled & disgorged by hand for perfect clarity. The resulting perry is a pure fruit basket of pears, melons, passion fruits augmented by minerality and a sherbety fizziness. An inevitably perfect accompaniment to an oyster or two. Alc. 4.5% vol.
