Still Dry Fine Cider
A single variety, spontaneously fermented cider made with late harvested Bisquet, a bitter-sweet apple known for its phenolic qualities. Towards the end of fermentation the cider was racked into neutral French oak barrels for a year long élevage. The result is intensely fruity & juicy, bursting with peach fuzz, sweet incense and a touch of old leather on the nose, dripping with sweet, ripe fruit – apricot, yellow plums, cantaloupe melon – all underpinned by something more earthbound and rugged that speaks of the orchard in autumn. There’s a little citrus oil here too, plus nutmeg spice, and subtle tannins. Reminiscent of orange wines, this cider holds bright flavours, tannins and acid; it's a super versatile bottle will match beautifully with curry spices, tangy hot wings or seafood tacos.
