Sparkling Dry Quince ‘Champagne Method’ Wine
A testament to a perfect spring and daring winemaking. Quince, known for its challenging nature, set a good crop after a flawless bloom. Makers milled the fruit and pushed the boundaries by macerating the pulp for five days, extracting an extraordinary depth of aroma and flavour.
The resulting juice was exquisite—beautifully acidic, like "razor wire." This thrilling acidity inspired LP to craft a Quince Wine using the traditional (aka ‘Champagne’) method. Fermented wild in steel, the wine was dry before Christmas. Following a cold settlement in the January snap, it was bottled in February for a second fermentation.
After time in the bottle, it was disgorged in July 2025 and rested for another seven months, this wine is finally ready for release. This creation is a source of immense pride for James, successfully capturing the essence of Quince in a highly drinkable & elegant alcoholic form, presenting a thrillingly perfumed aromatic profile and intensely exotic flavours.
