A very special selection by one of the best experimenters in cider - Mr Tom Oliver: often considered the godfather of the Fine Cider Movement, over the past two decades he has been putting centuries of Herefordshire cider making knowledge together with decades of personal experience.
He is known for pioneering the use of wild yeast fermentations & barrel ageing, with a reverence for legendary Herefordshire cider apples. Taking the best of the past, & experimenting with it in a contemporary way.
In this set we show off that spirit, with 3 fascinating boundary pushing bottles: a wonderful hybrid cider, a truly unique Keeved Perry, & a brand new release: Tom’s wonderful collaboration with Gen & Jonny at Mills Brewing, creating Foxbic three.
Foxbic three was made using the turbid mash method in the style of traditional Lambic producers. The wort was fermented with Foxwhelp juice & cider lees in old oak barrels for 17 months. Both Mills & Oliver's share a love of minimal intervention making, with a reliance on spontaneous fermentation, & what they have created is a true union of traditional cider making & beer brewing techniques.
