Fermented wild in steel, the wine was dry before Christmas. Following a cold settlement in the January snap, it was bottled in February for a second fermentation.\u003c\/p\u003e\n\u003cp\u003eAfter time in the bottle, they settled on a 12g\/L dosage to balance the acidity.
