Still Dry Fine Cider
A spontaneously fermented cider based around Egremont Russet apple; towards the end of the fermentation the juice was moved to ex-cognac barrels to finish fermenting & then mature on its fine lees.
It’s aromatic, fruity, & incredibly creamy! On the nose there's Russet apples along with exotic flowers & sweet incense. In the mouth it’s a textured mouthful of fruit – think ripe melon, kiwi fruit & pears, inter-laced with anise, lavender, nut & a stony minerality. What it also has is gorgeous, juicy acidity that makes it bright & super drinkable. Alc. 8.4% vol.
