A late season blend of traditional cider apples picked from Tom's very own Home Orchard, in Ocle Pychard, Herefordshire. The orchard is biennial so the blend of varieties should be comparable.
Formed through extended lees ageing & spontaneous fermentation without any further assistance, Tom allowed the wild yeasts to go on a deep dive this time. Alcohol: 10.1% vol.
