Still Dry Single Varietal cider
White Beech is a rare cider apple, but a real veteran & a fabulous variety. It's a very small, pale, creamy flecked apple, not dissimilar to the Eggleton Styre apple, only smaller.
This bottle comes from a single, old, hollow tree, hanging on for dear life. Precarious though life is, it gave enough fruit for a single barrel, once again, in 2018. The tree stands in the corner of the second orchard at Catley & Tom Oliver & cider-world legend John Worle grafted 2 baby trees, & like their parent, they are hanging in there. Fingers crossed...
This is a properly dry cidery cider & yet another example of why certain Herefordshire apple varieties are considered some of the best on this planet for cider making. Pass the cheese; it pairs beautifully.
