Still Dry Fine Cider

A blend of Ellis Bitter (98%) & Foxwhelp (2%) hand-picked in October 2018. AOD is Little Pomona’s annual exercise in long barrel maturation viewed through the prism of one of their favourite apple varieties - Ellis Bitter.

Fermented wild in the tank & then racked in spring into ex-whisky barrels – one lowland, one highland & one bourbon – & left for 16 months before blending & bottling. 

Golden yellow, sweetly aromatic; it’s layered with fruit, embracing the entirety of the apple from skin to core. As well as heady scents of barrel, perfume and spice. Ripe tannins, with the feel of wet slate. Alc. 7.3% vol
