Sparkling Medium Sweet Fine Perry 

A keeved perry with a difference. Higher acid pears were used, more Thorn, Green Horse, Gin in with Red Pears of all hues. The bright acidity does not always keeve well but this did with multiple rackings. Sweet honeyed fresh sap of pine on the nose. The bright enamel tingling acidity keeps this very fresh in the mouth but allows the honeyed citrus of the perry pears to play around the soft tannins. Like drinking a fresh citrus fruit cup. Abv 4.9%
