Medium Sweet Sparkling Fine Perry
This blend of various Perry pear varieties was made up over three weeks at the end of October and the start of November. The late season fruit tends to be rich and full bodied with good tannins. 2021 was a light cropping year in the pear orchard in Chew Stoke, but with good looking crops of Oldfield and generally very good quality fruit. With a small crop the makers looked to make a blend of late varieties, based around Oldfield & Pine, Hellens Green, White Longdon, Barnett, and New Meadow in supporting roles.
Fermented altogether in stainless steel during the colder winter months the nascent perry was racked a few times in the new year to reduce the amount of active yeast to stop the fermentation slightly young, a method Sam & Beccy call Rural Method. This leaves a residual sweetness and can be bottled with a light fizz.
Rich notes on the nose - caramel, dates, marzipan, combined with fresh pear, ripe stone fruit and raisin. Acidity is lovely quality and the tannins give some structure which help to balance the sweetness. Alc. 6.3%
