Sparkling Medium Dry co-ferment made in collaboration with Mills Brewing!

Made from an extra strong wort, drawn from a mash of barley and wheat malts, with added cane sugar. This recipe is similar to that used for a Belgian Golden Strong Ale.

It was fermented spontaneously in first-use Irish Whiskey barrels for 7 months, with an equal proportion of traditional cider apple juice. The majority of the juice blend was made from Michelin, with small amounts of Sheep's Nose and Foxwhelp.  

It's a classic Mills Oliver collab experience with beautifully integrated apple and wort, giving a lively, full in the mouth experience. A strong celebratory drink.

Both Mills & Oliver's share a love of minimal intervention making & a reliance on spontaneous fermentation, & what they have created in this bottle is a true union of traditional cider making & beer brewing techniques. This is their 9th creation. Alc. 10% vol Please note this bottle contains malted barley, rye, oats, wheat, gluten.
