Still Medium - Dry Fine Perry

The last batch of the Red Pear Perry, aged in Ornellia Red Wine Barrels; the previous batch was originally released as a part of a Barrel Room Series Set. Tom Oliver chose this combination of pear & barrel to see if the perry would garner a touch of colour from the barrel, & see if the wine wood & pears went well together.  

The resulting perry has pronounced micro-oxidation (think Jura wine), a deeper amber colour, a taste of rich stone, pear, & notes of sherry & plum pudding. A full mouthfeel with a touch of dry acidity towards the finish to counter the natural residual sweetness. One to savour. Alc. 7.4% vol.
