Sparkling Medium Dry Cherry Co-Ferment
This complex fruit cider combines barrel-aged cherry wine with new season keeved cider, & was made in a collaboration with Merlin Labron-Johnson, the chef behind the wonderful restaurant Osip, in the heart of rural Somerset.
On the taste, it has earthy cherries up-front. Dry-herbed meadowsweet adds subtle almond notes & cryo-extracted floribunda crabs add tart acidity. Natural sweetness & soft tannins are layered in by Somerset bittersweet apples. Fermented with wild yeasts & aged in ex-red wine wooden barrel. Alc. 4.7% vol
