Both Mills & Oliver's share a love of minimal intervention making, with a reliance on spontaneous fermentation, & what they have created is a true union of traditional cider making & beer brewing techniques.
Foxbic Three was made using the turbid mash method in the style of traditional Lambic producers. The wort was fermented with Foxwhelp juice & cider lees in old oak barrels for 17 months.
Fermented with wild yeasts.
