We are super excited to announce a new bottle from Little Pomona; their Cryo Conditioned 2017.
The makers, James and Susanna Forbes, love to experiment, and this is a great example of that. It’s a limited run experimental offering; a cider, fermented in former Moscatel barrels with wild yeasts, blended with an ice cider.
For the ice cider component, the juice from Foxwhelp, Blenheim Orange and Ribston Pippin apples were frozen and then pressed to extract super sweet concentrated juice which was then fermented with wild yeasts. This was then mixed with the barrel cider (56% Michelin, 25% Dabinett, 19% Médaille d’Or) and continued fermenting in bottle.
The resulting cider is naturally sparkling and bone dry with generous tannins. It has an intriguing wild herbal dimension from the ice cider component.
